Chef's Note

2 cloves garlic
1 teaspoon dried rosemary
1 teaspoon Dijon mustard

Preheat your oven to 400°F (200°C).

Pat the 4 chicken drumsticks dry with paper towels and place them in a medium bowl. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Mince 2 garlic cloves and add to a small bowl.

In the same small bowl, whisk together 2 tablespoons of the balsamic vinegar (reserving 1 tablespoon for later), 1 tablespoon honey, 1 teaspoon dried rosemary, 1 teaspoon Dijon mustard, and 1 tablespoon olive oil until well combined.

Pour three-quarters of the marinade over the chicken drumsticks, turning to coat evenly. Reserve the remaining quarter of the marinade for basting.

Heat an oven-safe skillet over medium-high heat. Once hot, add the drumsticks and sear for 2-3 minutes on each side until golden brown.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).

During the last 10 minutes of cooking, brush the drumsticks with the reserved marinade.

While the chicken is finishing, combine the remaining 1 tablespoon of balsamic vinegar with the pan juices in a small saucepan. Simmer over medium heat for 2-3 minutes until slightly reduced to create a glaze.

Remove the chicken from the oven and let rest for 5 minutes.

Drizzle the reduced balsamic glaze over the drumsticks before serving.
