  • 1.5 pounds russet potatoes

  • 1/4 cup all-purpose flour

    Pat chicken thighs dry with paper towels. Season both sides with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.

    Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon olive oil. Place chicken thighs skin-side down in the skillet and cook undisturbed for 8 minutes until skin is golden and crispy.
