For a make-ahead version, prepare this the night before and refrigerate. The chia seeds will fully gel overnight, creating an even thicker pudding texture. You can also use frozen berries instead of fresh - they'll thaw by morning if prepared in advance.

  • 3 tablespoons chia seeds

  • 1/2 cup unsweetened almond milk

  • 1 cup vanilla protein yogurt (high protein Greek yogurt)

  • 1/4 teaspoon cinnamon

  • 1 teaspoon stevia or monk fruit sweetener

  • 1/4 cup blueberries
