Chef's Note
For meal prep, make these roll-ups in the morning and refrigerate them wrapped in parchment paper to keep them fresh for dinner. The vegetables will maintain their crunch and the roll-ups won't get soggy.

12 oz deli turkey breast, sliced thin
4 slices reduced-fat Swiss cheese slices
1 cup mixed bell peppers (red, yellow, green)
1 medium cucumber
2 medium carrots
1 cup cherry tomatoes
4 tbsp hummus
2 tsp Dijon mustard
4 large leaves romaine lettuce leaves
8 crackers high-fiber crackers
Instructions

Wash the cucumber, bell peppers, carrots, and cherry tomatoes.

Slice the cucumber into thin sticks about 4 inches long.

Slice the bell peppers into thin strips.

Peel and cut the carrots into thin sticks.

Cut the cherry tomatoes in half.

Lay out the turkey slices on a clean work surface.

Spread 1/2 teaspoon of Dijon mustard on each turkey slice.

Place one slice of Swiss cheese on top of each of 4 turkey slices.

Arrange a few vegetable sticks (cucumber, bell pepper, and carrot) along one edge of each turkey and cheese stack.
