Chef's Note
For an extra smooth hummus, consider removing the skins from the chickpeas. It takes a few extra minutes but results in an incredibly creamy texture. You can also make this ahead of time - the hummus will keep in the refrigerator for up to 5 days in an airtight container.

1 15 oz can canned chickpeas
3 tablespoons tahini
2 cloves garlic
1 medium lemon
2 tablespoons extra virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
2 tablespoons water
2 medium carrot
1 medium cucumber
1 medium red bell pepper
2 stalks celery
Instructions

Drain and rinse 1 15 oz can of chickpeas, reserving 2 tablespoons of the liquid.

Peel 2 cloves of garlic and roughly chop them.

Cut 1 lemon in half and squeeze to extract 2 tablespoons of juice.

In a food processor, combine the drained chickpeas, 3 tablespoons of tahini, the chopped garlic, 2 tablespoons of lemon juice, 2 tablespoons of olive oil, 1 teaspoon of ground cumin, 1/2 teaspoon of smoked paprika, and 1/2 teaspoon of salt.

Process for 1-2 minutes until the mixture starts to become smooth.

With the processor running, slowly add 2 tablespoons of water (or reserved chickpea liquid) until the hummus reaches your desired consistency.

Taste and adjust seasonings if needed, adding more salt, lemon juice, or cumin according to preference.

Transfer the hummus to a serving bowl and create a small well in the center. Drizzle with a little extra olive oil and sprinkle with a pinch of smoked paprika for garnish.

Wash all vegetables thoroughly.

Peel 2 medium carrots and cut into sticks about 3 inches long and 1/2 inch wide.

Cut 1 medium cucumber into similar-sized sticks, removing seeds if desired.

Remove seeds and stem from 1 red bell pepper and cut into strips.

Trim 2 celery stalks and cut into 3-inch pieces.

Arrange the vegetable sticks on a plate alongside the bowl of hummus and serve.
