1/4 cup dried cranberries
1/4 cup dried apricots
1/4 cup dried edamame or soy nuts
2 tablespoons whey protein powder
1 tablespoon maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon sea salt

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

Roughly chop 1/4 cup almonds and 1/4 cup walnuts into smaller pieces.

In a medium bowl, combine the chopped nuts with 1/4 cup pumpkin seeds.

In a small bowl, whisk together 1 tablespoon maple syrup, 1/2 teaspoon cinnamon, and 1/4 teaspoon sea salt until well combined.

Pour the maple mixture over the nuts and seeds, and toss until evenly coated.

Spread the coated mixture in a single layer on the prepared baking sheet.

Bake for 12-15 minutes, stirring once halfway through, until lightly toasted and fragrant. Watch carefully to prevent burning.
