For the best flavor, choose peaches that yield slightly to gentle pressure and smell sweet and fragrant. If peaches aren't in season, you can substitute with canned peaches in juice (drained), though fresh will always give the best flavor.

2 cups full-fat cottage cheese
2 medium ripe peaches
2 teaspoons honey
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 cup chopped walnuts
6 leaves fresh mint leaves

Wash the 2 peaches thoroughly under cold running water.

Slice the peaches in half, remove the pits, and cut each half into thin slices.

In a medium bowl, mix 2 cups of cottage cheese with 1/2 teaspoon of vanilla extract and 1/4 teaspoon of cinnamon.

Divide the cottage cheese mixture between two serving bowls.

Arrange the sliced peaches on top of the cottage cheese.

Drizzle 1 teaspoon of honey over each serving.
