  • 4 pieces bone-in, skin-on chicken thighs

  • 1 whole lemon

  • 1 tablespoon fresh thyme

  • 1 teaspoon fresh rosemary

  • 3 cloves garlic

  • 3 tablespoons extra virgin olive oil

  • 1 cup jasmine rice

  • 1.5 cups chicken broth

  • 1 medium shallot

  • 2 medium broccoli crowns

  • 2 tablespoons pine nuts

  • 2 tablespoons dried cranberries

  • 2 tablespoons parsley

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon butter

    Zest and juice the lemon. Mince the garlic cloves. Finely chop the thyme and rosemary. Chop the parsley.

    In a bowl, combine 2 tablespoons olive oil, lemon zest, 1 tablespoon lemon juice, minced garlic, thyme, rosemary, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

    Pat the chicken thighs dry with paper towels. Place in a shallow dish and pour the marinade over them, turning to coat. Let marinate for 15 minutes while preparing other components.

    Dice the shallot. Rinse the jasmine rice in cold water until the water runs clear, then drain well.
