  • 1 pound beef tenderloin

  • 2 tablespoons black peppercorns

  • 1 teaspoon kosher salt

  • 2 tablespoons olive oil

  • 3 medium carrots

  • 2 medium parsnips

  • 1 medium yellow onion

  • 6 sprigs fresh thyme

  • 3 tablespoons butter

  • 8 ounces cremini mushrooms

  • 2 cloves garlic

  • 1 tablespoon all-purpose flour

  • 1/2 cup beef broth

  • 1/4 cup heavy cream

  • 1 teaspoon Dijon mustard

  • 2 tablespoons fresh parsley

    Preheat oven to 425°F (220°C).

    Coarsely crush 2 tablespoons of black peppercorns using a mortar and pestle or by placing them in a ziplock bag and crushing with a heavy pan.

    Pat 1 pound of beef tenderloin dry with paper towels. Season all sides with 1 teaspoon kosher salt, then press the crushed peppercorns onto all sides of the beef.

    Peel and cut 3 medium carrots and 2 medium parsnips into 2-inch pieces. Quarter 1 medium yellow onion.
