  • 12 oz penne pasta

  • 1 lb Italian sausage, casings removed

  • 1 large red bell pepper

  • 1 large yellow bell pepper

  • 1 medium yellow onion

  • 3 cloves garlic

  • 1/4 tsp crushed red pepper flakes

  • 1 tsp dried oregano

  • 1/2 cup grated Parmesan cheese

  • 1/4 cup fresh basil leaves

  • 3 tbsp olive oil

  • 6 cups mixed salad greens

  • 1 cup cherry tomatoes

  • 1 medium cucumber

  • 2 tbsp red wine vinegar

  • 1 tsp Dijon mustard

    Bring a large pot of salted water to a boil for the pasta.

    Slice the red and yellow bell peppers into 1/2-inch strips. Dice the onion. Mince the 3 cloves of garlic. Tear or roughly chop the 1/4 cup of fresh basil leaves.

    For the salad, wash and dry the mixed greens. Halve the cherry tomatoes. Peel and slice the cucumber into half-moons.

    Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks, until browned and cooked through, about 5-7 minutes.

    Add the diced onion to the skillet with the sausage and cook until softened, about 3 minutes.

    Add the sliced bell peppers and cook until they begin to soften, about 4-5 minutes.

    Add the minced garlic, 1 tsp dried oregano, and 1/4 tsp red pepper flakes to the skillet. Cook until fragrant, about 1 minute.

    Meanwhile, cook the pasta according to package directions until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta water before draining.

    Add the drained pasta to the skillet with the sausage and peppers. Toss to combine, adding a splash of the reserved pasta water to create a light sauce. Season with salt and pepper to taste.

    For the salad dressing, whisk together the remaining 1 tbsp olive oil, 2 tbsp red wine vinegar, and 1 tsp Dijon mustard in a small bowl. Season with salt and pepper.

    In a large bowl, toss the mixed greens, halved cherry tomatoes, and sliced cucumber with the dressing.
