  • 2 whole lime

  • 1/2 cup fresh cilantro

  • 3 cloves garlic

  • 4 cups low-sodium chicken broth

  • 1 can (15 oz) black beans, canned, drained and rinsed

  • 1 can (14.5 oz) diced tomatoes, canned

  • 1 medium bell pepper, red

  • 1 medium zucchini

  • 1 medium onion

  • 1 tablespoon ground cumin

  • 1 teaspoon chili powder

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

    In a bowl, combine the juice of 1 lime, 1/4 cup chopped cilantro, 1 minced garlic clove, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Add the chicken breasts, turning to coat. Set aside to marinate while preparing the soup.

    Dice the onion, red bell pepper, and zucchini into 1/2-inch pieces. Mince the remaining 2 garlic cloves.

    Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

    Add the minced garlic, diced bell pepper, and zucchini to the pot. Cook for 5 minutes, stirring occasionally, until vegetables begin to soften.

    Stir in 1 tablespoon ground cumin and 1 teaspoon chili powder. Cook for 30 seconds until fragrant.
