
Lemon-Herb Baked Cod with Roasted Broccoli and Cauliflower Rice

Chef's Note
For the best results, look for cod fillets of even thickness to ensure they cook at the same rate. If you can't find fresh herbs, you can substitute with 1 teaspoon each of dried thyme and dill.

1.5 lbs cod fillets
1 whole lemon
1 tablespoon fresh thyme
1 tablespoon fresh dill
3 cloves garlic
4 cups broccoli florets
3 cups cauliflower rice
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper

Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper.

Wash and pat dry the cod fillets. Place them on one of the prepared baking sheets.

Mince 3 cloves of garlic. In a small bowl, combine 1 tablespoon of olive oil, minced garlic, 1 tablespoon chopped fresh thyme, and 1 tablespoon chopped fresh dill.

Zest the lemon and add half the zest to the herb mixture. Slice the lemon and set aside.

Brush the herb-oil mixture over the cod fillets. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Place lemon slices on top of the fish.

Wash and cut broccoli into florets if needed. Toss the broccoli florets with 1/2 tablespoon olive oil, 1 teaspoon paprika, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Spread on the second baking sheet.

Place both baking sheets in the oven. Bake the broccoli for 20 minutes and the cod for 12-15 minutes, or until it flakes easily with a fork.

While the fish and broccoli are baking, heat a non-stick skillet over medium heat. Add 1/2 tablespoon olive oil.

Add 3 cups of cauliflower rice to the skillet. Season with the remaining lemon zest and 1/4 teaspoon salt. Cook for 5-7 minutes, stirring occasionally, until tender.

Serve the cod fillets with the roasted broccoli and cauliflower rice.
