Chef's Note
For a spicier version, add a few dashes of hot sauce to the BBQ sauce. You can also use any frozen vegetable mix you prefer - a California blend or Asian stir-fry mix works great too!

1/2 lb ground beef
1 cup white rice
2 cups frozen mixed vegetables
1/3 cup bottled BBQ sauce
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp vegetable oil
1/2 tsp salt
1/4 tsp black pepper
2 cups water

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup white rice and 1/4 teaspoon salt. Reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed and rice is tender.

While rice cooks, heat 1 tablespoon vegetable oil in a large skillet over medium-high heat.

Add 1/2 lb ground beef to the skillet, breaking it up with a spatula. Season with 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.

Cook the beef for 5-7 minutes until browned and cooked through.

Add 2 cups frozen mixed vegetables to the skillet with the beef and cook for 3-4 minutes until heated through.

Reduce heat to low and stir in 1/3 cup BBQ sauce. Simmer for 2 minutes until everything is well combined and hot.

Fluff the cooked rice with a fork and divide between two bowls.

Top each bowl of rice with the BBQ beef and vegetable mixture.
