Ingredients
  • 1 cup quinoa

  • 2 cups water

  • 1 cup milk (dairy or plant-based)

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 3 tablespoons honey

  • 1.5 cups mixed berries (strawberries, blueberries, raspberries)

  • 1/4 cup sliced almonds

  • 3 small bars homemade oat bars

Instructions
  • 1

Rinse 1 cup quinoa thoroughly under cold water using a fine mesh strainer.

  • 2

In a medium saucepan, combine the rinsed quinoa with 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is tender.

  • 3

Once quinoa is cooked, stir in 1 cup milk, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, and 2 tablespoons honey. Simmer on low heat for 5 minutes until creamy and warm.

  • 4

While the quinoa mixture is warming, wash and slice any larger berries if needed.

  • 5

Divide the warm quinoa mixture into three bowls.

  • 6

Top each bowl with 1/2 cup mixed berries and sprinkle with sliced almonds.

  • 7

Drizzle the remaining 1 tablespoon honey over the three bowls.

  • 8

Crumble one homemade oat bar over each bowl just before serving.

  • 9

    Serve immediately while warm.
