3 slices thick-cut bread slices
2 whole large eggs
1/4 cup milk
1 medium ripe banana
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 tablespoon butter
1/4 cup Greek yogurt
1 teaspoon honey

In a shallow bowl, mash 1 medium ripe banana with a fork until mostly smooth with some small chunks remaining.

Add 2 large eggs, 1/4 cup milk, 1 teaspoon ground cinnamon, and 1/2 teaspoon vanilla extract to the mashed banana. Whisk together until well combined.

Heat a large non-stick skillet over medium heat and add 1 tablespoon butter, swirling to coat the pan.

Dip each of the 3 bread slices into the banana egg mixture, coating both sides thoroughly but not soaking too long (about 3-4 seconds per side).

Place the coated bread slices in the hot skillet and cook for 3-4 minutes until golden brown on the bottom.

Flip each slice and cook for another 3-4 minutes until golden brown and cooked through.
