For extra crispy hash browns, resist the urge to stir them constantly - letting them sit undisturbed creates that golden, crunchy crust everyone loves. If your hash browns are frozen in a solid block, break them apart with a fork before adding to the pan.

1 cup frozen hash browns
2 whole large eggs
2 tablespoons shredded cheddar cheese
1 tablespoon vegetable oil
1/4 teaspoon salt
1/8 teaspoon black pepper

Heat 1 tablespoon of vegetable oil in a medium nonstick skillet over medium heat for 1 minute.

Add 2 breakfast sausage links to the skillet and cook for 5 minutes, turning occasionally until browned on all sides and cooked through. Transfer sausages to a plate and slice into bite-sized pieces.

In the same skillet, add 1 cup of frozen hash browns in an even layer. Cook for 4 minutes without stirring until the bottom is golden brown, then flip and cook for 2 more minutes until crispy.

While hash browns cook, crack 2 large eggs into a small bowl and whisk with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper until well combined.

Push the hash browns to one side of the skillet. Pour the whisked eggs into the empty side and gently scramble with a spatula for 1-2 minutes until just set but still soft.

Add the sliced sausage pieces back to the skillet and gently mix everything together for 30 seconds to heat through.

Remove from heat and sprinkle 2 tablespoons of shredded cheddar cheese over the top. Let sit for 30 seconds to melt slightly, then transfer to a plate and serve immediately.
