This baked oatmeal can be made ahead and refrigerated for up to 4 days. Simply reheat individual portions in the microwave for 60-90 seconds. For a dairy-free version, substitute almond or oat milk.

3 cups rolled oats
2 medium ripe bananas
2 large eggs
2 cups milk
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
2 cups mixed berries (fresh or frozen)
1/2 cup chopped walnuts

Preheat the oven to 375°F (190°C). Lightly coat a 9x9-inch baking dish with cooking spray.

In a large bowl, mash the 2 medium ripe bananas with a fork until mostly smooth.

Add 2 large eggs to the mashed bananas and whisk until well combined.

Stir in 2 cups of milk, 1/4 cup maple syrup, and 1 teaspoon vanilla extract. Mix well.

In a separate bowl, combine 3 cups rolled oats, 1 teaspoon cinnamon, 1 teaspoon baking powder, and 1/4 teaspoon salt.

Add the dry ingredients to the wet ingredients and stir until everything is well combined.

Gently fold in 1 1/2 cups of the mixed berries, reserving 1/2 cup for topping.

Pour the mixture into the prepared baking dish. Arrange the remaining 1/2 cup berries on top and sprinkle with 1/2 cup chopped walnuts.
