For extra texture and flavor, try toasting the walnuts in a dry pan for 3-4 minutes before adding them to your oats. You can also prepare these oats up to 3 days in advance for multiple breakfasts throughout the week!

1 cup rolled oats
1 cup milk (dairy or plant-based)
1 medium apple
1 teaspoon ground cinnamon
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
1/4 cup chopped walnuts
1/4 cup Greek yogurt
Instructions

In a medium bowl, combine 1 cup rolled oats and 1 cup milk.

Wash, core, and dice 1 medium apple into small cubes (about 1/4 inch pieces).

Add the diced apple, 1 teaspoon ground cinnamon, 2 tablespoons maple syrup, and 1/2 teaspoon vanilla extract to the oat mixture. Stir well to combine.

Divide the mixture evenly between two mason jars or containers with lids.

Seal the containers and refrigerate overnight or for at least 6 hours.

Before serving, stir the oats and top each jar with 2 tablespoons Greek yogurt and 2 tablespoons chopped walnuts.
