Chef's Note
For the perfect salmon, look for the white protein to just begin appearing on the sides of the fillet - this indicates it's nearly done. Remove from the oven at this point as the residual heat will continue cooking the fish to perfection while resting.

2 6-oz salmon fillets
3 tbsp pure maple syrup
1 tbsp low-sodium soy sauce
1 tsp Dijon mustard
2 cloves, minced garlic
1 tsp, grated fresh ginger
2 medium, cubed sweet potatoes
1 medium, diced red bell pepper
1/2 medium, diced red onion
2 tbsp, divided olive oil
2 sprigs fresh thyme
1/2 tsp smoked paprika
1/4 tsp ground cinnamon
1/2 tsp, divided salt
1/4 tsp, divided black pepper

Preheat oven to 425°F (220°C).

In a small bowl, whisk together 3 tbsp maple syrup, 1 tbsp soy sauce, 1 tsp Dijon mustard, 2 minced garlic cloves, and 1 tsp grated ginger to create the glaze. Set aside.

Peel and cut 2 medium sweet potatoes into 1-inch cubes. Dice 1 medium red bell pepper and 1/2 medium red onion.

On a large baking sheet, toss the sweet potatoes, red bell pepper, and red onion with 1 1/2 tbsp olive oil, 1/2 tsp smoked paprika, 1/4 tsp cinnamon, 1/4 tsp salt, and 1/8 tsp black pepper.

Add 2 sprigs of fresh thyme to the vegetable mixture and spread in an even layer on the baking sheet.

Roast the vegetables for 15 minutes, then remove from oven and stir.

While vegetables are roasting, pat the salmon fillets dry with paper towels and season with 1/4 tsp salt and 1/8 tsp black pepper.

Heat a medium oven-safe skillet over medium-high heat. Add 1/2 tbsp olive oil.

Place the salmon fillets skin-side down in the skillet and sear for 3 minutes until the skin is crispy.

Brush the salmon generously with the maple glaze, reserving some for later.

Transfer the skillet to the oven and roast alongside the vegetables for about 8-10 minutes, until the salmon is cooked through but still slightly pink in the center.

During the last 2 minutes of cooking, brush the salmon with the remaining glaze.

Remove both the salmon and vegetables from the oven. Discard the thyme sprigs from the vegetable medley.
