Chef's Note
For an extra flavor boost, add a pinch of red pepper flakes to the sauce if you like a little heat. The spinach can be substituted with any quick-cooking vegetable you have on hand, such as frozen peas or sliced zucchini.

12 oz penne pasta
1 lb mild Italian sausage
24 oz jarred marinara sauce
2 cups baby spinach
1/2 cup grated parmesan cheese
1 tsp salt
Instructions

Bring a large pot of water to boil. Add 1 tsp of salt and 12 oz of penne pasta. Cook according to package directions until al dente, usually 8-10 minutes.

While pasta is cooking, remove casings from 1 lb of Italian sausage and break into small pieces.

In a large skillet over medium heat, cook the sausage pieces until browned and cooked through, about 7-8 minutes.

Pour 24 oz of marinara sauce into the skillet with the cooked sausage. Stir to combine and simmer for 5 minutes.

Add 2 cups of baby spinach to the sauce and stir until wilted, about 1 minute.

Drain the cooked pasta and add it directly to the sauce. Stir to coat the pasta evenly.

Serve in bowls topped with grated parmesan cheese.
