Chef's Note
For a more complex flavor profile, try toasting the almonds before adding them to the granola mixture. You can also substitute seasonal fruits based on availability - try peaches in summer or pomegranate seeds in winter. The homemade granola will stay fresh in an airtight container for up to two weeks.

1 cup fresh strawberries, hulled and diced
1 cup fresh blueberries
1 cup fresh raspberries

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large bowl, mix 2 cups granola, 1/2 cup sliced almonds, 2 tablespoons chia seeds, 2 tablespoons ground flaxseeds, 2 tablespoons maple syrup, 1 tablespoon melted coconut oil, 1/2 teaspoon cinnamon, and 1/8 teaspoon salt until well combined.

Spread the granola mixture evenly on the prepared baking sheet and bake for 20-25 minutes, stirring halfway through, until golden brown and crisp. Allow to cool completely.

While the granola is baking, in a medium bowl, whisk together 3 cups Greek yogurt, 1/3 cup honey, 2 teaspoons vanilla extract, and 1 teaspoon lemon zest until smooth and well combined.

Gently wash all berries and pat dry. Dice the strawberries into small, bite-sized pieces.

Once the granola has cooled, begin assembling the parfaits in 12 small cups or mason jars.

Start with a layer of the enhanced granola mixture (about 1-2 tablespoons) at the bottom of each cup.

Add a layer of the honey-vanilla yogurt (about 2 tablespoons) on top of the granola.

Add a layer of mixed berries (about 1 tablespoon of combined berries).

Repeat the layers once more: granola, yogurt, and berries.
