Chef's Note
For extra flavor, try adding a pinch of nutmeg to the cheese sauce. If you prefer a crispier topping, place the gratin under the broiler for the last 2-3 minutes of cooking, but watch carefully to prevent burning!

1 lb (half bag) frozen French fries
16 slices American cheese slices
4 cups fresh broccoli florets
1 medium yellow onion
3 cloves garlic
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup panko breadcrumbs
2 tablespoons olive oil

Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

Bring a large pot of salted water to a boil. Add 4 cups of broccoli florets and blanch for 3 minutes until bright green but still firm. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.

Dice 1 medium yellow onion and mince 3 cloves of garlic.

In a large saucepan, melt 3 tablespoons of butter over medium heat. Add the diced onion and cook for 4-5 minutes until softened.

Add the minced garlic and cook for another 30 seconds until fragrant.

Sprinkle 3 tablespoons of flour over the onion mixture and stir continuously for 1-2 minutes to form a roux.

Gradually whisk in 2 cups of milk and 1 cup of heavy cream, stirring constantly to prevent lumps.

Bring the mixture to a simmer and cook for 3-4 minutes until it begins to thicken.

Reduce heat to low and add 8 slices of American cheese, torn into pieces. Stir until melted and smooth.

Arrange half of the frozen French fries (about 1/2 lb) in an even layer in the prepared baking dish.

Spread half of the blanched broccoli over the fries.
