Chef's Note
Toasting the oats before mixing them in adds a wonderful nutty flavor that elevates these energy bites. For a smoother texture, you can pulse half the oats in a food processor before adding them to the mixture.

Ingredients
1 cup rolled oats
1 medium ripe banana
1/3 cup almond butter
2 tablespoons honey
1/4 cup dark chocolate chips
2 tablespoons unsweetened cocoa powder
2 tablespoons ground flaxseed
1 tablespoon chia seeds
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon sea salt
1/4 cup chopped walnuts
1/4 cup dried cranberries
Instructions
- 1
Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
- 2
Spread 1 cup of rolled oats on the baking sheet and toast in the oven for 10 minutes, stirring halfway through, until lightly golden and fragrant.
- 3
While oats are toasting, mash 1 medium ripe banana in a large mixing bowl until smooth.
- 4
Add 1/3 cup almond butter and 2 tablespoons honey to the mashed banana and mix until well combined.
- 5
Remove toasted oats from the oven and let cool for 5 minutes.
- 6
Add the cooled oats, 2 tablespoons cocoa powder, 2 tablespoons ground flaxseed, 1 tablespoon chia seeds, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and 1/4 teaspoon sea salt to the banana mixture.
- 7
Fold in 1/4 cup dark chocolate chips, 1/4 cup chopped walnuts, and 1/4 cup dried cranberries until evenly distributed.
- 8
Cover the bowl and refrigerate for 20 minutes to firm up the mixture and make it easier to handle.
- 9
Using a tablespoon measure, scoop the mixture and roll into 12 evenly sized balls with slightly damp hands to prevent sticking.
- 10
Place the energy bites on a parchment-lined plate and refrigerate for at least 1 hour before serving to allow them to set completely.
- 11
Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
