Chef's Note
For extra flavor, try using different varieties of hotdogs such as cheese-filled or jalapeño. You can also prepare this casserole up to a day ahead - assemble everything except the French fries and cheese topping, then add those just before baking.

3 packs (24 hotdogs total) frozen hotdogs
1/2 bag (about 16 oz) frozen French fries
1 tbsp minced garlic
1 large yellow onion
1 medium red bell pepper
1 medium green bell pepper
2 cups, shredded cheddar cheese
1 cup, shredded mozzarella cheese
8 slices bacon
1/2 cup ketchup
1/4 cup yellow mustard
1/4 cup relish
2 tbsp Worcestershire sauce
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
4 stalks, chopped green onions

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

Cook 8 slices of bacon in a large skillet until crispy, about 8-10 minutes. Remove, drain on paper towels, and crumble when cool.

Dice the yellow onion and bell peppers into small, uniform pieces.

In the same skillet with 1 tbsp of bacon fat, sauté the diced onion for 3-4 minutes until translucent.

Add 1 tbsp of minced garlic and sauté for another 30 seconds until fragrant.

Add the diced bell peppers and cook for another 3-4 minutes until slightly softened.

Slice all hotdogs into 1/2-inch rounds. Add to the skillet and cook for 5 minutes, stirring occasionally to lightly brown the edges.

In a small bowl, mix 1/2 cup ketchup, 1/4 cup yellow mustard, 1/4 cup relish, and 2 tbsp Worcestershire sauce.

Pour the sauce mixture into the skillet and stir to coat all ingredients. Season with 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, and 1/2 tsp black pepper.

Transfer the hotdog mixture to the prepared baking dish and spread evenly.

Sprinkle 1 cup of shredded cheddar cheese over the hotdog mixture.

In a bowl, toss the frozen French fries with 2 tbsp olive oil until coated.

Arrange the French fries in a single layer on top of the cheese layer.

Sprinkle the remaining 1 cup of cheddar cheese and 1 cup of mozzarella cheese over the French fries.

Top with the crumbled bacon pieces.
