Chef's Note
For a more complex flavor profile, try toasting the spices in a dry pan for 30 seconds before adding to the apples. This activates the essential oils in the spices and creates a more aromatic final dish.

Ingredients
4 medium Granny Smith apples
3 cups Greek yogurt (2% fat)
4 scoops protein powder (unflavored or vanilla)
4 tablespoons honey
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamom
2 teaspoons vanilla extract
2 teaspoons lemon juice
2 tablespoons unsalted butter
1/2 cup walnuts
1 cup rolled oats
2 tablespoons brown sugar
1/4 teaspoon salt
Instructions
- 1
In a mixing bowl, combine 3 cups of Greek yogurt with 4 scoops of protein powder and 2 teaspoons of vanilla extract. Whisk until smooth and refrigerate while preparing other components.
- 2
Peel, core, and dice 4 medium Granny Smith apples into 1/2-inch cubes. Toss with 2 teaspoons of lemon juice to prevent browning.
- 3
In a small bowl, mix 2 teaspoons of cinnamon, 1/2 teaspoon of nutmeg, 1/4 teaspoon of cardamom, and 1/4 teaspoon of salt.
- 4
Heat a medium skillet over medium heat and add 2 tablespoons of unsalted butter. Once melted, add the diced apples and cook for 5 minutes, stirring occasionally.
- 5
Sprinkle the spice mixture over the apples and add 2 tablespoons of brown sugar. Continue cooking for 8-10 minutes until apples are tender but still hold their shape. Remove from heat and let cool for 15 minutes.
- 6
Meanwhile, toast 1 cup of rolled oats and 1/2 cup of chopped walnuts in a dry skillet over medium heat for 5-7 minutes, stirring frequently until golden and fragrant. Set aside to cool.
- 7
To assemble each parfait: In a serving glass, layer 1/4 of the yogurt mixture, followed by 1/4 of the spiced apples, then another 1/4 of yogurt, and top with 1/4 of the oat-walnut mixture.
- 8
Drizzle each parfait with 1 tablespoon of honey just before serving.
- 9
For best flavor development, refrigerate assembled parfaits (without honey) for at least 20 minutes before serving.
