Chef's Note
For extra flavor, try adding 1/4 teaspoon of smoked paprika to the meatball mixture. You can also prepare the meatballs ahead of time and refrigerate them for up to 24 hours before cooking for a quicker weeknight meal.

1/3 cup breadcrumbs

2 pounds sweet potatoes
2 tablespoons butter
1/4 cup milk
1 tablespoon maple syrup
1 tablespoon olive oil
12 ounces green beans
2 tablespoons fresh parsley

In a large bowl, combine 1 pound ground turkey, 1/3 cup breadcrumbs, 1 large egg, 1/2 diced onion, 2 minced garlic cloves, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently until just combined.

Form the mixture into 16 meatballs, about 1.5 inches in diameter each.

Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through (internal temperature of 165°F).

While the meatballs are cooking, place 2 pounds peeled and cubed sweet potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Reduce heat and simmer for 15 minutes or until fork-tender.

In a separate pot, bring water to a boil and add 12 ounces trimmed green beans. Cook for 3-4 minutes until crisp-tender. Drain and set aside.

Drain the sweet potatoes and return them to the pot. Add 2 tablespoons butter, 1/4 cup milk, and 1 tablespoon maple syrup. Mash until smooth and season with salt and pepper to taste.

Pour 1/2 cup BBQ sauce over the cooked meatballs in the skillet. Reduce heat to low and simmer for 2-3 minutes, turning the meatballs to coat evenly.

Serve the meatballs over the sweet potato mash with green beans on the side. Drizzle with the remaining 1/4 cup BBQ sauce and garnish with 2 tablespoons chopped parsley if desired.
