Chef's Note
For the best texture, choose firm apples that will hold their shape when baked. If you prefer a less sweet version, reduce the sugar by half and add a pinch more cinnamon. The vanilla cream can be made up to 24 hours in advance and kept refrigerated.

1/4 cup granulated sugar
1/4 cup brown sugar
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
3 tablespoons unsalted butter
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon cornstarch
2 tablespoons water
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla bean paste (or additional extract)
1/8 teaspoon salt

Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.

Core the 4 apples and slice them into 1/4-inch thick slices (no need to peel unless preferred).

In a small bowl, mix 1/4 cup granulated sugar, 1/4 cup brown sugar, 2 teaspoons cinnamon, and 1/4 teaspoon nutmeg.

Place the apple slices in a large bowl and toss with 1 tablespoon lemon juice.

Sprinkle the sugar-cinnamon mixture over the apples and toss gently until evenly coated.

Arrange the apple slices in the prepared baking dish, slightly overlapping them.

Cut 3 tablespoons butter into small pieces and dot them over the top of the apples.

In a small bowl, mix 1 teaspoon cornstarch with 2 tablespoons water until dissolved, then drizzle over the apples.

Cover the dish with aluminum foil and bake for 20 minutes.

Remove the foil and bake for an additional 10 minutes until the apples are tender but still hold their shape.

While the apples are baking, prepare the vanilla cream by whisking 1 cup heavy cream until it begins to thicken.

Add 2 tablespoons powdered sugar, 1 teaspoon vanilla bean paste, and 1/8 teaspoon salt to the cream and continue whisking until soft peaks form.
