Chef's Note
For perfectly crisp apple chips, make sure all slices are uniform in thickness. If you don't have a mandoline, freeze the apples for about 15 minutes before slicing to make them easier to cut thinly with a knife. The chips will continue to crisp as they cool, so don't worry if they seem slightly soft when first removed from the oven.
