3 tablespoons honey

1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
1 teaspoon lemon zest
8 leaves fresh mint leaves for garnish

Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a large bowl, combine 2 cups rolled oats, 1/2 cup sliced almonds, 1/4 cup chopped walnuts, 1/4 cup coconut flakes, 1 teaspoon cinnamon, and 1/4 teaspoon salt.

In a small saucepan over low heat, warm 3 tablespoons coconut oil until melted. Remove from heat and stir in 1/4 cup maple syrup and 1 teaspoon vanilla extract.

Pour the liquid mixture over the oat mixture and stir until everything is evenly coated.

Spread the granola mixture evenly on the prepared baking sheet.

To assemble each parfait: in a clear glass or jar, layer 1/4 cup yogurt mixture, 2 tablespoons berry mixture, and 2 tablespoons granola. Repeat the layers once more, finishing with berries on top.
