Chef's Note
For the perfect chocolate coating, ensure strawberries are completely dry before dipping - any moisture will cause the chocolate to seize. Bringing the strawberries to room temperature before serving enhances both the flavor of the fruit and the chocolate, creating a more luxurious taste experience.

Ingredients
12 large fresh strawberries
6 oz high-quality dark chocolate (70% cocoa)
1 tbsp unsalted butter
1/4 tsp sea salt flakes
2 oz white chocolate chips
2 tbsp chopped pistachios
1/2 tsp dried culinary lavender
1/4 tsp gold edible dust (optional)
Instructions
- 1
Thoroughly wash 12 large strawberries and pat completely dry with paper towels. Leave stems intact for easier handling.
- 2
Line a baking sheet with parchment paper and set aside.
- 3
Create a double boiler by placing a heat-safe bowl over a pot with 1 inch of simmering water (ensure the bowl doesn't touch the water).
- 4
Add 6 oz of dark chocolate and 1 tbsp of unsalted butter to the bowl, stirring occasionally until completely melted and smooth (about 5 minutes).
- 5
Remove the bowl from heat and stir in 1/4 tsp of sea salt flakes. Let the chocolate cool for 5 minutes, stirring occasionally.
- 6
Hold each strawberry by the stem and dip into the melted chocolate, rotating to coat evenly, leaving a small portion of red showing at the top.
- 7
Place dipped strawberries on the prepared baking sheet, spacing them apart to prevent sticking together.
- 8
Melt 2 oz of white chocolate chips in a microwave-safe bowl in 15-second intervals, stirring between each interval until smooth (about 1 minute total).
- 9
Transfer the melted white chocolate to a small piping bag or a zip-top bag with a tiny corner snipped off.
- 10
Drizzle white chocolate decoratively over 4 of the chocolate-dipped strawberries.
- 11
Sprinkle 2 tbsp of chopped pistachios over 4 different chocolate-dipped strawberries before the chocolate sets.
- 12
Sprinkle 1/2 tsp of dried culinary lavender over the remaining 4 strawberries.
- 13
If using, lightly brush a small amount of the gold edible dust on select areas of the strawberries for an elegant finish.
- 14
Refrigerate all strawberries for 20 minutes to set the chocolate completely.
- 15
Remove from refrigerator and let stand at room temperature for 5 minutes before serving for the best flavor and texture.
