Chef's Note
For the best flavor, toast the nuts just before serving. The contrast between the cool yogurt and warm nuts creates a delightful sensory experience. You can customize the nut mixture based on your preferences, but the combination of different textures is what makes this snack special. Try warming the honey slightly before drizzling for easier pouring and enhanced aroma.

Ingredients
2 cups full-fat Greek yogurt
1/4 cup raw almonds
1/4 cup raw walnuts
1/4 cup raw pistachios
2 tablespoons raw pumpkin seeds
2 tablespoons high-quality honey
2 tablespoons orange blossom honey (alternative option)
1/2 pod vanilla bean pod
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon flaky sea salt
1/2 cup fresh berries (optional)
2 whole fresh figs, quartered (when in season)
Instructions
- 1
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- 2
Split the 1/2 vanilla bean pod lengthwise and scrape out the seeds with the back of a knife.
- 3
In a medium bowl, combine 2 cups of Greek yogurt with the vanilla bean seeds, 1/4 teaspoon of ground cardamom, and 1/4 teaspoon of flaky sea salt. Stir gently to incorporate. Cover and refrigerate while preparing the nuts.
- 4
In a small bowl, mix the 1/4 cup almonds, 1/4 cup walnuts, 1/4 cup pistachios, and 2 tablespoons pumpkin seeds with 1/2 teaspoon ground cinnamon.
- 5
Spread the nut mixture evenly on the prepared baking sheet. Toast in the preheated oven for 12-15 minutes, stirring halfway through, until fragrant and lightly golden. Watch carefully to prevent burning.
- 6
Remove nuts from the oven and let cool completely on the baking sheet for about 10 minutes.
- 7
Once cooled, roughly chop the larger nuts, leaving some whole for texture variation.
- 8
Divide the prepared yogurt between two serving bowls.
- 9
Drizzle 1 tablespoon of honey over each bowl of yogurt.
- 10
Sprinkle the toasted nut mixture evenly over both servings.
- 11
If using, arrange fresh berries or quartered figs around the yogurt.
- 12
Serve immediately, or cover and refrigerate for up to 2 hours before serving.
