1 medium (130g) sweet potato
1/3 cup black beans, canned, drained and rinsed
3 large (100g) egg whites
1 tortilla whole wheat tortilla (10-inch)
1/4 medium red bell pepper
2 tablespoons red onion
1 clove garlic
1 teaspoon olive oil
1 tablespoon fresh cilantro
1/4 medium lime
1/2 teaspoon cumin
1/4 teaspoon smoked paprika
1/4 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 medium avocado

Preheat oven to 400°F (200°C). Peel the sweet potato and dice into 1/2-inch cubes.

Toss sweet potato cubes with 1/2 teaspoon olive oil, 1/4 teaspoon cumin, 1/4 teaspoon salt, and a pinch of black pepper. Spread on a baking sheet and roast for 15 minutes or until tender and slightly caramelized.

While the sweet potatoes roast, dice the red bell pepper and finely chop the red onion and garlic.

Heat 1/2 teaspoon olive oil in a non-stick skillet over medium heat. Add the onion and cook for 2 minutes until softened.

Add the diced bell pepper and garlic, cooking for another 2 minutes until fragrant.

Add the drained black beans, remaining 1/4 teaspoon cumin, smoked paprika, and chili powder. Cook for 2 minutes, stirring occasionally.

Push the bean mixture to one side of the pan and pour in the egg whites. Scramble gently until just set, about 2-3 minutes.

Fold the roasted sweet potatoes and egg whites into the bean mixture. Remove from heat.

Warm the whole wheat tortilla in the microwave for 15 seconds or in a dry skillet.
