Toast 15g of raw pistachios in a dry skillet over medium heat for 4-5 minutes, stirring frequently until fragrant and lightly browned.

Allow the pistachios to cool for 2 minutes, then transfer to a cutting board and roughly chop them, reserving a few whole pieces for garnish.

In a small bowl, combine 3/4 cup of lactose-free Greek yogurt with 1/4 teaspoon of vanilla extract and a pinch of sea salt.

Gently fold in 1/8 teaspoon of ground cinnamon and 1/4 teaspoon of fresh lemon zest until evenly distributed throughout the yogurt.
