20 g shelled pistachios
25 g dried apricots
15 g vanilla protein powder
15 g rolled oats
1 tsp honey
1/4 tsp cinnamon
1/8 tsp cardamom
1/8 tsp ginger powder
1/4 tsp orange zest
1 pinch salt

Preheat oven to 325°F (165°C). Spread 20g of pistachios on a baking sheet and toast for 8-10 minutes until fragrant, being careful not to burn them.

Allow the toasted pistachios to cool completely, then pulse in a food processor until coarsely chopped. Reserve 1 teaspoon for coating.

Add 25g of dried apricots to the food processor with the chopped pistachios and pulse until the apricots are finely chopped and begin to form a paste with the nuts.

Transfer the mixture to a bowl and add 15g of vanilla protein powder, 15g of rolled oats, 1 tsp of honey, 1/4 tsp of cinnamon, 1/8 tsp of cardamom, 1/8 tsp of ginger powder, 1/4 tsp of orange zest, and a pinch of salt.

Mix thoroughly until all ingredients are well combined. If the mixture is too dry, add 1/2 teaspoon of water at a time until it holds together when pressed.

Using clean hands, portion the mixture into 4 equal parts and roll into balls.

Roll the energy bites in the reserved chopped pistachios to coat the outside.

Place the energy bites on a plate lined with parchment paper and refrigerate for at least 30 minutes to firm up before serving.
