Chef's Note
For the best flavor development, choose dark red or black grapes which tend to be sweeter and more complex when roasted. If you're sensitive to lactose, goat cheese is often better tolerated than cow's milk cheeses, but you can also substitute with a lactose-free cheese alternative if needed.

1 cup red grapes
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon fresh thyme
1 teaspoon olive oil
2 ounces goat cheese
1 tablespoon walnuts
1/8 teaspoon sea salt
1/8 teaspoon black pepper
4 crackers whole grain crackers

Preheat oven to 400°F (200°C) and line a small baking sheet with parchment paper.

Wash 1 cup of red grapes and remove them from the stem. Pat dry with paper towels.

In a small bowl, whisk together 1 tablespoon balsamic vinegar, 1 teaspoon honey, 1 teaspoon olive oil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.

Place the grapes on the prepared baking sheet and drizzle with the balsamic mixture. Toss to coat evenly.

Strip 1 teaspoon of fresh thyme leaves from stems and sprinkle over the grapes.

Roast in the preheated oven for 15-20 minutes, until grapes are slightly wrinkled and the balsamic glaze has thickened.

While grapes are roasting, toast 1 tablespoon of walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Watch carefully to prevent burning.

Remove grapes from oven and let cool for 5 minutes.

Arrange the roasted grapes on a small plate with 2 ounces of crumbled goat cheese and the toasted walnuts.

Garnish with additional fresh thyme if desired and serve with 4 whole grain crackers.
