Chef's Note
For the best flavor contrast, serve this dish when the grapes are still warm but not hot, allowing the goat cheese to slightly soften without fully melting. You can substitute lactose-free cream cheese if goat cheese is unavailable, though the flavor profile will change slightly.

Ingredients
1 cup red grapes
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon fresh thyme leaves
2 ounces goat cheese (lactose-free)
1 teaspoon olive oil
1/8 teaspoon sea salt
1/8 teaspoon black pepper
4 pieces whole grain crackers
Instructions
- 1
Preheat oven to 400°F (200°C).
- 2
Wash 1 cup of red grapes and remove them from the stem. Place in a small baking dish.

In a small bowl, whisk together 1 tablespoon balsamic vinegar, 1 teaspoon honey, 1 teaspoon olive oil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.
- 4
Pour the balsamic mixture over the grapes and toss to coat evenly. Sprinkle with 1 teaspoon fresh thyme leaves.

- 8
Serve immediately with 4 whole grain crackers on the side.
