For the best flavor, crush the dried rosemary between your fingers or in a mortar and pestle before adding to the seasoning mix. This releases more of the aromatic oils and prevents large, sharp pieces in your popcorn. If you have a mister bottle, you can lightly spray the popcorn with olive oil after popping to help the seasoning adhere better.

3 tablespoons nutritional yeast
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary (crushed)
1/4 teaspoon garlic powder

1/8 teaspoon black pepper

In a small bowl, combine 3 tablespoons nutritional yeast, 1/4 teaspoon dried thyme, 1/4 teaspoon crushed dried rosemary, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon sea salt, and 1/8 teaspoon black pepper. Mix thoroughly and set aside.

In a medium pot with a tight-fitting lid, heat 1 teaspoon olive oil over medium-high heat.

Add 3 tablespoons popcorn kernels to the pot and cover with the lid, leaving it slightly ajar to allow steam to escape.

Gently shake the pot back and forth across the burner as the kernels begin to pop to prevent burning.

Once the popping slows to about 2-3 seconds between pops, remove from heat and let sit for 30 seconds to ensure all kernels have popped.

Transfer the hot popcorn to a large bowl and immediately sprinkle with half of the nutritional yeast herb mixture.

Toss the popcorn, then add the remaining mixture and toss again until evenly coated.
