For the best texture and flavor, allow these energy bites to chill completely before eating. The flavors will develop and meld together beautifully after a few hours in the refrigerator. You can also freeze these for up to a month - just thaw in the refrigerator for about an hour before enjoying.

Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

Spread 1/4 cup rolled oats and 2 tablespoons sunflower seeds on the baking sheet and toast for 8-10 minutes until lightly golden, stirring halfway through.

Allow the toasted oats and seeds to cool completely, about 10 minutes.

In a medium bowl, combine 1/4 cup pumpkin puree, 1/4 cup vanilla protein powder, 1 tablespoon ground flaxseed, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon cinnamon, 1 teaspoon maple syrup, 1 tablespoon almond butter, 1/4 teaspoon vanilla extract, and 1/8 teaspoon salt.

Add the cooled toasted oats and sunflower seeds to the bowl and mix thoroughly until well combined.

Cover the mixture and refrigerate for 15 minutes to firm up slightly.

With slightly damp hands, roll the mixture into 4 equal-sized balls, about 1.5 inches in diameter.
