12 oz wild salmon fillets
1 tablespoon curry powder
1/2 teaspoon red chili flakes
2 cloves garlic
1 whole lemon
2 tablespoons olive oil
2 medium bell peppers
1 medium zucchini
1/2 medium red onion
1/2 teaspoon salt
1/4 teaspoon black pepper

Preheat oven to 425°F (220°C).

In a small bowl, mix curry powder, red chili flakes, minced garlic, juice of half a lemon, 1 tablespoon olive oil, salt, and pepper.

Pat salmon fillets dry with paper towels and place on a lined baking sheet. Brush the curry mixture over the salmon.

Cut bell peppers, zucchini, and red onion into 1-inch pieces and toss with remaining olive oil, salt, and pepper.

Spread vegetables on another baking sheet in a single layer.

Place both baking sheets in the oven. Roast vegetables for 20-25 minutes, and salmon for 12-15 minutes until it flakes easily with a fork.

Slice the remaining lemon half into wedges for serving.
