1 tablespoon unsweetened shredded coconut

1 tablespoon unsweetened shredded coconut (for rolling)

Remove pits from 3 medium medjool dates and place them in a small bowl. Cover with warm water and let soak for 10 minutes to soften.

Drain the dates thoroughly and pat dry with a paper towel.

In a food processor, combine the softened dates, 2 tablespoons vanilla protein powder, 1 tablespoon almond butter, 1 tablespoon shredded coconut, 1 teaspoon cocoa powder, 1/4 teaspoon cinnamon, and 1/4 teaspoon vanilla extract.

Pulse until the mixture forms a sticky, uniform dough, scraping down the sides as needed (about 1-2 minutes).

Place the mixture in the refrigerator for 10 minutes to firm up slightly.

Place 1 tablespoon of shredded coconut on a small plate for rolling.

Remove the mixture from the refrigerator and divide into 3 equal portions.
