3/4 cup lactose-free Greek yogurt
1/4 cup fresh strawberries, hulled and sliced
1/4 cup fresh blueberries
1 tablespoon raw honey
1/4 cup homemade granola (oats, almonds, coconut oil, maple syrup)
1/2 teaspoon lemon zest
1/4 teaspoon pure vanilla extract
2 leaves fresh mint leaves

For the homemade granola: Preheat oven to 325°F (165°C). Mix 1 cup rolled oats, 2 tablespoons chopped almonds, 1 tablespoon coconut oil, and 1 tablespoon maple syrup. Spread on a baking sheet and bake for 15 minutes until golden, stirring halfway through. Cool completely (you'll use 1/4 cup for this recipe and can store the rest).

In a small bowl, combine 3/4 cup lactose-free Greek yogurt with 1/4 teaspoon vanilla extract and mix well.

In another small bowl, toss 1/4 cup sliced strawberries and 1/4 cup blueberries with 1/2 teaspoon lemon zest.

In a clear glass or jar, begin layering by adding 1/3 of the yogurt mixture to the bottom.

Add 1/3 of the berry mixture on top of the yogurt layer.

Sprinkle 1 tablespoon of the cooled homemade granola over the berries.

Repeat the layers two more times, ending with granola on top.
