For the best texture and flavor development, allow these energy bites to chill overnight before enjoying. The spices will meld together beautifully, and the bites will firm up to the perfect consistency. If you prefer a smoother texture, process the mixture longer; for more texture, fold in additional chopped nuts at the end.

1 cup walnuts
1 cup rolled oats
1/2 cup dates, pitted
1/4 cup almond butter
2 tablespoons honey
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

1/8 teaspoon ground cloves
1/4 teaspoon sea salt
2 tablespoons flaxseed meal
1 tablespoon chia seeds
1 teaspoon vanilla extract
1 teaspoon orange zest
1 tablespoon coconut oil
1/4 cup unsweetened shredded coconut

Preheat oven to 325°F (165°C). Spread walnuts on a baking sheet and toast for 8-10 minutes until fragrant, being careful not to burn them.

While walnuts are toasting, spread rolled oats on a separate baking sheet and toast in the oven for 10-12 minutes until lightly golden.

Allow walnuts and oats to cool completely (about 10 minutes).

In a food processor, pulse the toasted walnuts until coarsely chopped. Remove half and set aside.

Add the toasted oats to the food processor with the remaining walnuts and pulse until finely ground.

Add the dried apples and pitted dates to the food processor and pulse until chopped and well combined with the oat-walnut mixture.

Heat 1 tablespoon of coconut oil in a small saucepan over low heat. Add 2 tablespoons of honey, 1/4 cup of almond butter, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 1/4 teaspoon of ginger, 1/8 teaspoon of cloves, and 1/4 teaspoon of sea salt. Stir until well combined and slightly warm.

Pour the warm spiced almond butter mixture into the food processor along with 1 teaspoon of vanilla extract and 1 teaspoon of orange zest. Pulse until everything starts to come together.

Add 2 tablespoons of flaxseed meal and 1 tablespoon of chia seeds to the mixture and pulse briefly to incorporate.

Transfer the mixture to a bowl and fold in the reserved chopped walnuts for texture.

Place 1/4 cup of shredded coconut in a shallow dish.

With slightly damp hands, scoop about 1 tablespoon of the mixture and roll into balls. Roll each ball in the shredded coconut to coat.
