Chef's Note
For extra flavor with minimal effort, add a dollop of plain Greek yogurt instead of sour cream to save on calories while adding protein. You can also use pre-made guacamole instead of sliced avocado if you're really in a hurry!

8 each corn tortillas
8 each large eggs
2 cups canned black beans, drained and rinsed
1 cup jarred salsa
1 cup shredded cheddar cheese
2 tablespoons vegetable oil
2 each avocado, sliced
Instructions

Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat.

Place 8 corn tortillas in the skillet and warm for about 30 seconds per side. Remove and set aside.

In the same skillet, crack 8 eggs and cook to your preference (sunny-side up or over-easy works best).

While eggs are cooking, heat 2 cups of black beans in a microwave-safe bowl for 1-2 minutes until warm.

Place 2 warm tortillas on each plate and top each with 1/4 cup of the warmed black beans.

Place 2 cooked eggs on top of each serving.

Spoon 1/4 cup of salsa over each serving.

Sprinkle 1/4 cup of shredded cheddar cheese over each serving.

Divide the sliced avocado equally among the plates.

Serve immediately while still warm.
