2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 cup orange marmalade
1/4 cup soy sauce
1 teaspoon garlic powder
2 tablespoons vegetable oil
4 cups instant white rice
4 cups frozen broccoli florets
Instructions

Bring 4 cups of water to a boil in a large pot for the rice.

While water is heating, heat 2 tablespoons vegetable oil in a large skillet over medium-high heat.

Add 2 pounds chicken pieces to the skillet and cook for 6-8 minutes, stirring occasionally, until chicken is no longer pink and reaches 165°F internally.

In a small bowl, mix 1 cup orange marmalade, 1/4 cup soy sauce, and 1 teaspoon garlic powder.

Pour the orange sauce over the cooked chicken and stir to coat. Reduce heat to medium-low and simmer for 3-4 minutes until sauce thickens slightly.

Add 4 cups instant rice to the boiling water, stir, cover, and remove from heat. Let stand for 5 minutes.

While rice is standing, microwave 4 cups frozen broccoli according to package directions (approximately 4-5 minutes).
