Chef's Note
You can use any frozen vegetable mix you have on hand. For an even quicker meal, use pre-minced garlic from a jar (1 teaspoon equals about 2 cloves).

6 oz boneless skinless chicken breast
1 cup frozen mixed vegetables
2 cloves garlic
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon vegetable oil
1 cup pre-cooked rice

Cut 6 oz chicken breast into 1-inch pieces.

Mince 2 cloves of garlic.

Heat 1 tablespoon vegetable oil in a large pan over medium-high heat.

Add chicken pieces to the hot pan and cook for 4-5 minutes until no longer pink in the center.

Add 1 cup frozen mixed vegetables and minced garlic to the pan. Stir-fry for 2-3 minutes until vegetables are heated through.

In a small bowl, mix 1 tablespoon honey and 1 tablespoon soy sauce.

Pour the honey-soy mixture over the chicken and vegetables. Stir to coat everything evenly.
