Chef's Note
For extra flavor with minimal effort, add a sprinkle of pre-chopped green onions from the grocery store. They keep well in the fridge and add color and flavor without any chopping required!

2 large eggs
2 small flour tortillas
1/4 cup shredded cheddar cheese
2 tablespoons salsa
1 teaspoon butter
1/8 teaspoon salt
1/8 teaspoon black pepper
Instructions

Crack 2 eggs into a small bowl and whisk with 1/8 teaspoon salt and 1/8 teaspoon black pepper until combined.

Heat a non-stick skillet over medium heat and add 1 teaspoon butter.

Once butter is melted, pour in the egg mixture and cook for 2-3 minutes, gently stirring occasionally until eggs are scrambled but still slightly moist.

Warm 2 tortillas in the microwave for 15-20 seconds or in a dry pan for 30 seconds per side.

Divide the scrambled eggs between the two tortillas.

Sprinkle 1/4 cup shredded cheddar cheese over the eggs.

Top each with 1 tablespoon salsa.

Fold the tortillas in half and enjoy immediately.
