Preheat your oven to 400°F (200°C) and lightly grease 2 muffin cups.

In a small bowl, mix together 1/4 cup cornmeal, 1/4 cup flour, 1 tablespoon sugar, 1/2 teaspoon baking powder, and 1/4 teaspoon cinnamon.

Add 1/4 cup milk and 1 tablespoon vegetable oil to the dry ingredients and stir just until combined (don't overmix).

Divide the batter between the 2 prepared muffin cups.

Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.

Allow to cool for 5 minutes before removing from the muffin tin.
