Chef's Note
For creamier grits, you can substitute half the water with milk. If you prefer a fully cooked yolk, simply flip the egg and cook for an additional minute.

1 cup water
1/4 cup shredded cheddar cheese
1 teaspoon butter
1 large egg
1/4 teaspoon salt
1/8 teaspoon black pepper

Bring 1 cup of water to a boil in a small saucepan.

Slowly stir in 1/4 cup instant grits and 1/4 teaspoon salt. Reduce heat to low and cook for 5 minutes, stirring occasionally.

While grits are cooking, heat a small non-stick skillet over medium heat. Add 1 teaspoon butter to melt.

Crack 1 egg into the skillet and cook until the white is set but yolk is still runny, about 3-4 minutes. Season with a pinch of salt and pepper.

Once grits are done, remove from heat and stir in 1/4 cup shredded cheddar cheese until melted.

Pour cheesy grits into a bowl, top with the fried egg, and sprinkle with remaining 1/8 teaspoon black pepper.
