Chef's Note

For the best texture, allow the granola to cool completely before adding to your parfait. This homemade granola stays fresh in an airtight container for up to two weeks, so consider making a double batch to have on hand for quick breakfasts and snacks throughout the week.

Ingredients
  • 2 cups old-fashioned rolled oats

  • 1/2 cup raw almonds

  • 1/2 cup raw walnuts

  • 1/4 cup unsweetened coconut flakes

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 1/3 cup pure maple syrup

  • 3 tablespoons coconut oil

  • 1 teaspoon vanilla extract

  • 1/3 cup dried cranberries

  • 3 cups Greek yogurt (full-fat)

  • 4 tablespoons honey

  • 2 cups fresh berries (strawberries, blueberries, raspberries)

  • 8 leaves fresh mint leaves

Instructions
  • 1

Preheat the oven to 325°F (165°C) and line a large baking sheet with parchment paper.

  • 2

In a large mixing bowl, combine 2 cups of rolled oats, 1/2 cup of almonds (roughly chopped), 1/2 cup of walnuts (roughly chopped), 1/4 cup of coconut flakes, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt.

  • 3

In a small saucepan over low heat, warm 3 tablespoons of coconut oil until melted. Remove from heat and stir in 1/3 cup of maple syrup and 1 teaspoon of vanilla extract.

  • 4

Pour the liquid mixture over the dry ingredients and stir thoroughly until everything is well coated.

  • 5

Spread the granola mixture evenly on the prepared baking sheet.

  • 6

Bake for 25-30 minutes, stirring gently every 10 minutes to ensure even browning.

  • 7

Remove from the oven when the granola is golden brown and fragrant. It will crisp up further as it cools.

  • 8

Once completely cooled, mix in 1/3 cup of dried cranberries and store in an airtight container.

  • 9

To assemble each parfait, place 1/4 cup of Greek yogurt in the bottom of a glass or jar.

  • 10

Drizzle 1/2 tablespoon of honey over the yogurt.

  • 11

Add 3 tablespoons of the homemade granola.

  • 12

Layer another 1/4 cup of Greek yogurt on top.

  • 13

Add 1/4 cup of fresh mixed berries.

  • 14

Top with another 3 tablespoons of granola and drizzle with another 1/2 tablespoon of honey.

  • 15

Garnish each parfait with a mint leaf and serve immediately.
