2 cups 2% milk
1 tablespoon pure vanilla extract
3 tablespoons honey
1 cup Greek yogurt
2 cups fresh mixed berries (strawberries, blueberries, raspberries)
1 medium sliced banana
1/4 cup toasted almond slices
1/4 cup toasted coconut flakes
1 teaspoon lemon zest
1/2 teaspoon cinnamon
2 tablespoons maple syrup (for drizzling)

In a medium bowl, whisk together 2 cups of 2% milk, 1 tablespoon of vanilla extract, and 2 tablespoons of honey until well combined.

Add 1/2 cup of chia seeds to the milk mixture and whisk thoroughly to prevent clumping.

Let the mixture sit for 5 minutes, then whisk again to break up any clumps that may have formed.

Cover the bowl and refrigerate for at least 4 hours or overnight until the pudding has thickened to a tapioca-like consistency.

While the chia pudding is setting, prepare the fruit compote by combining 1 cup of mixed berries with 1 tablespoon of honey in a small saucepan.

Simmer the berry mixture over medium-low heat for 5-7 minutes until the berries break down slightly and release their juices. Remove from heat and allow to cool completely.

In a small skillet over medium heat, toast 1/4 cup of almond slices and 1/4 cup of coconut flakes until golden brown, about 3-4 minutes, stirring frequently to prevent burning. Set aside to cool.
